You find yourself walking the streets of Paris and all of a sudden you have a need, a need for some beef in a bun. There is not an In & Out Burger in site, however an even better oasis of flame charred meat appears in the form of food truck and you just found one the best burgers to eat in the new Parisian food scene. Le Camion Qui Fume(the Smoking Truck) started this burger revolution in Paris and is now serving up some seriously great burgers.

Many revolutions have begun throughout the history of France, however starting a burger revolution in Paris–the food capital of the world—would seem nearly impossible. Leave it to an American chef to break down some French culinary walls.

I joined owner and head chef of gourmet burger truck Le Camion Qui Fume, Kristin Frederick, on a cold and rainy day on the streets of Paris, yet at eleven o’clock in the morning, the line already started forming. Frederick began with one burger food truck, which caught like wild fire and is now the talk of Paris, “I had a small idea of making burgers on a truck and turned into an actual business.”

Former Californian Frederick was trained in Paris for her cooking skills. Today this American entrepreneur has not only created the first food truck in all of France, Frederick has also launched herself a mini-burger empire, along with what many have called the best burger in all of Paris.

Along with her gourmet burger cookbook, Frederick will soon have a fleet of four burger trucks, one even testing the waters outside of Paris, and has also launched her own sandwich shop—Freddie’s Deli which is serving up it’s own pastrami, as well as more American deli icons.

As the rain started to pick up, so did the line at Le Camion Qui Fume, which this chilly morning was parked at Place De La Madeleine, one of their regular spots during the week.

Frederick saw an opening in the daily lunch lives of the French and went right for their bellies, “the French do not take a sack lunch to work, they don’t know what one is, they eat out every day.” The plan to create the best burger in Paris seems to have worked, the first person in line this day was a French businessman getting four burgers for himself and three co-workers –on his motorcycle—all still in the rain.

The burger revolution has begun in Paris, so if you are searching for a cool place to eat in the city where all gastronomy roads lead, get on your Twitter and find where Le Camion Qui Fume has set up shop for the day or night and dive into one of their amazing burgers, you will not be disappointed.

On an episode of The Layover, Anthony Bourdain raved on Frederick’s classique burger declaring, “That is a good f****** burger.” You too will be dazzled by these works of art on a bun, seriously one of the best burgers you will ever eat in Paris or anywhere for that matter.
